Recipe: Easy Endurance Truffles

These delicious truffles are high in protein & healthy fat and will keep you feeling satiated for a long time. Ideal for your on-the-go snack or sweet treat. I also suggest bringing these along for your long, slow workouts like endurance bike rides. They smell incredible and taste even better. Enjoy!

Step 1: Pulverize oats in a food processor. Next, add all ingredients into the processor until a grainy texture is achieved.

Step 2: Roll about 1 tablespoon of the dough in the palm of your hands to make balls.

Step 3: Roll these delicious puppies in coconut flakes or your favorite topping, or dust with cacao powder.

Ingredients:

▫️2/3C raw sunflower seeds
▫️2/3C raw cashews
▫️1/2C raw almonds
▫️1C pitted dates
▫️1C rolled oats
▫️1/3C shredded coconut
▫️2tbs coconut oil
▫️1/2C maple syrup
▫️1tsp cinnamon
▫️1/2tsp salt
▫️1/3C raw cacao powder (optional) 🥥🥥🥥

 

Directions:
Pulverize oats in a food processor. Next, add all other ingredients to the food processor until fully integrated. Use palms of hands to roll into balls, then finish off with a roll in shredded coconut or cacao powder if you’re feeling divine. Store in the freezer or refrigerator (up to a week).
